The Ties That Bind was brewed with barley, wheat, oats, and spelt. The wort was fermented in red wine barrels with a blend of our house souring cultures. After aging for 2 years on lees, a bright and assertive sour ale emerged with both depth and grace.
Elle starts as a saison that is fermented in stainless with a mixed culture of classic saison strains, wild yeast, and bacteria. The beer then rests in a foudre for 6 months gaining oak notes and a rounded acidic profile.
