Sour IPA combines two of our greatest passions: West Coast IPAs and barrel-aged sours. We started by brewing a mixed-culture sour base beer with the addition of a massive amount of Mosaic hops in the whirlpool. The Brettanomyces-forward ale was then aged in a mix of new and used oak barrels, allowing complex tartness and pronounced oak character to develop. We finished this “Sour India Pale Ale” with an intense double dry-hopping regimen of Citra, Simcoe, Galaxy and Nugget in the barrels and the blending tank. The result is a bright and complex citrus and pineapple hop bomb!
