This particular Hommage has macerated for 6 months and the final fruit intensity is 350 grams of fruit per litre. While blending, local honey was added. 3 Fonteinen Hommage is the result of macerating hand-picked whole sour cherries and raspberries on young lambic for at least four months, in a proportion of 760 to 800 grams of raspberries and 200 to 240 grams of sour cherries per litre of lambic. This fruit lambic is then blended again with more lambic to obtain a minimum intensity of 35% fruit. Hommage is a bodied raspberry lambic beer, with an intense deep red forest fruit bouquet. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added.

The final fruit intensity is 388 grams of fruit per liter of Hommage (38.8%). As from this blend forward, the maceration of Hommage will include 100kg more sour cherries. 3 Fonteinen Hommage is a lambic blended with 30% Pajottenland raspberries and 5% sour cherries.

Oude Kriek 3 Fonteinen is produced by ripening of cherries (both the flesh and the seeds) in young Lambic. This process takes between 6 to 8 months. After bottling the beer matures for at least 4 months in a warm room where the spontaneous fermentation in the bottle is done. The head of Oude Kriek is very sensitive to the concentration of the cherry seeds containing oil and may differ from one year to the other. On old Cherry 3 Fonteinen, no flavorings, sweeteners, or dyes added which makes this beer very natural and is especially thirst quenching.
